How To Fill Your Freezer with farm-to-table beef

Buying Farm to Table beef in bulk will save you money! Besides avoiding multiple trips to the grocery store, you get the added benefits of customizing your beef, we will butcher your steer just the way you want it. You can’t put a price on knowing exactly where your food comes from!

How It Works

What is The Process for ordering a Steer for Your Freezer From Thomas Cattle & Catering? 

  1. You can give us a call, we walk you through the entire process, or, place a deposit online to reserve the next available butcher date.
  2. We send your steer to the processor on the butcher date. The steer is slaughtered and we start the dry aging process for the next 7-10 days.
  3. Then we send you our custom cut sheet.

We will fill out the cut sheet together so that you’re aware of every option to customize your steer share.

4. You’ll get all the mainstream butcher cuts that you can find in a store, plus every specialty butcher cut (most steakhouses may not even offer) thanks to our world class butcher that carefully cuts and procures your beef!

   

5. Then it takes a week to cut, vacuum seal and flash freeze your beef, ready for pick or delivery.


How Soon Can I Expect to Receive My Order?

For ¼, ½, and whole steer, you can expect it to be ready within 4-6 weeks. For steak packs, it takes 1-3 weeks.

The beef we sell you will ALWAYS be freshly butchered.


YOU PAY FOR THE HANGING WEIGHT.

This means the weight of the dressed carcass of the steer.

Once slaughtered and dressed, we weigh your steer hanging on the butcher's hook.

Depending on how you choose to fill out the cut sheet, you can expect to yield 61-64% of your steer's hanging weight in packaged vacuum sealed beef.

ie: (Bone-in is heavier than boneless)

These yields are only possible with a master butcher and the most superior Angus genetics in Texas.


YOU only PAY for what you get.

Because you're paying for the hanging weight of the unique steer that you get, the weights vary.

So you only pay for what you get.

If the steer is smaller, you pay less than estimated and get less beef.

If the steer is larger you pay more, and recieve more beef.



All in all, it takes 2-3 weeks from the butcher date to prepare your beef and have it ready for pick-up. You can also have it delivered to your doorstep in the greater Houston area.


Every piece is vacuum-sealed and flash-frozen to lock in freshness and lasts at least a year or more in the freezer.

    Our ranch is located just outside of Houston, Texas, where cattle have plenty of space to roam free. Beef preparation takes place just an hour from downtown Houston. 

  • How Does The Pricing Work For A Steer?

    When buying ¼, ½, and whole steer, the price is per pound, based on its hanging weight, which is the weight of the carcass hanging on the butcher's hook. Our skilled butchers work meticulously to save as much beef as possible, yielding around 61-64% of the hanging weight. Ordering bone-in options will produce a higher yield. 

  • What Are The Benefits of Buying in Bulk and Filling Your Freezer?

    When you purchase a whole or half steer, you can share the beef with your family or neighbors. The quality you enjoy with the first steak is the same quality every time you reach into your freezer for more. The price you pay will feed your family for up to a year, avoiding market price increases.

  • How Much Freezer Space Will I Need When Buying Beef in Bulk?

    • For a 1/4: 5-7cu ft freezer
    • For a 1/2: 19-24cu ft freezer
    • For a whole steer: A large deep chest freezer
  • How Long Can Frozen Beef Last?

    All of our beef is flash-frozen and vacuum sealed, so it’s good for up to 12 months or longer. 


  • How Much Do I Need to Buy?

    If buying a year’s worth of beef, I recommend the following based on household size:

    • 2-3 people: ¼ steer
    • 3-5 people: ½ steer
    • 6+ people whole steer

  • Can Beef From Thomas Cattle & Catering Be Delivered?

    We’re happy to personally deliver meat within the greater Houston area for a small fee. 

  • WHAT IS THE HANGING WEIGHT?

    The hanging weight is the carcass weight of the steer, hanging on the butcher's hook.


    This is what you're paying for when purchasing a share of a steer.

    Upon slaughter, the steer is then de-hided and dressed.

    How you choose to customize the butchering of your steer will determine how much you will yeild. Generally you will expect to get 61-64% of your hanging weight in packaged, vacuum sealed beef.
